Southwest Chipotle Marinated Grilled Chicken
4 George’s Chicken Boneless, Skinless Chicken Breasts, thawed
2 teaspoons minced garlic
1 chipotle pepper in adobo sauce, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons tomato paste
1/2 cup buttermilk
3 tablespoons vegetable oil
2 tablespoons fresh lime juice
2 teaspoons ground cumin
Salt and pepper, to taste
- Combine all ingredients except chicken breasts in a small bowl.
- Pour mixture over chicken and cover. Marinate in refrigerator for at least 3 hours, up to one day.
- Grill chicken over medium-high heat for 7-10 minutes on each side, or until no longer pink in the center.
